Well today I had some visitors for morning tea! You know those family friends you grow up thinking are your real Aunties and Uncles but are actually your folks best friends who you love dearly?…Well my ‘Auntie’ and ‘Uncle’ dropped in today on their way home from holidays to see the new addition to our family.
Athough only one aspect was chocolate, I did manage to make some treats with things that were already in my kitchen. That always excites me..much like the feeling you get when you just came across a great bargain!! The final products: Chocolate coated shortbread and Pikelets with fresh cream and Rhubarb Compote.
If anyone likes shortbread that melts in your mouth?….this is a recipe I have adjusted…hope you like it!
Melt – in – your – mouth Shortbread
225 grams softened butter
1/2 cup icing sugar ( confectioners sugar)
1/4 cornflour ( cornstarch)
1 1/2 cups plain flour
Preheat the oven to 190° C ( 375° F ). Line a baking tray or a square tin with baking paper.
Beat butter until light and fluffy. Add sifted dry ingredients and mix on low for about 1 minute. Mix for a further 3 mins on high. Now you can either place spoonfuls on the tray for individual biscuits or press into a tin for a slab that can later be cut up .
Cook for 15 mins making sure not to brown the edges. Let cool on the tray or in the pan. When cool: eat, cut or dip in chocolate and enjoy!!!
